How do parents go about planning their kids’ lunches?
Witherspoon: I think the best thing to do is to get your children involved. That’s the biggest piece, teaching them those life skills that they need when they leave the home. Part of that is pitching in and teamwork with the family
What are do’s and don’ts for your children’s lunch?
Witherspoon: We want to put things in the lunches that will give them protein. Whether that’s cottage cheese, There’s protein in there and fat and carbs; you’re set. Greek yogurt is really good, and you could even toss some frozen berries in that, and that’s going to be just fine by the time you get to lunch, especially if you’ve got a cold pack in there. Really, it’s what does your child like
How can you make dinner time healthier and easier during the school year?
Witherspoon: A great time to do that is over the weekend. Most people don’t want to meal plan. They want zero part of that. But something that we do at our home is we all sit together and we’re like, okay, let’s call it out. We need six meals. And so everybody just pings out and I’ve only got two kids, but it’s just like, well, I want this, I want that. So that’s what we go to the store for. Vegetables, fruits, make sure they’re in season. Frozen vegetables can be, and fruit, incredibly nutritious. Because those are flash frozen right after they’re picked, so a lot of great nutrition in that, and also really affordable too.
