
Stand in a grocery aisle and the sorting happens almost automatically. Anything with a long ingredient list goes back on the shelf. Anything that looks close to how it grew goes in the cart. Over the past several years, the degree of processing has quietly become the main thing many people use to judge whether a food is good for them, and a great deal of health coverage has encouraged that shortcut. A large analysis presented at NUTRITION 2026 suggests the shortcut may be measuring the wrong thing.
What the Research Found
Researchers drew on three long-running US cohorts following more than 200,000 adults over a period of decades. Rather than sorting participants into the usual two categories of ultra-processed versus minimally processed, they built a four-way split, cross-referencing processing level against nutritional quality. That produced four groups instead of two: healthy diets that were ultra-processed, healthy diets that were minimally processed, and the unhealthy versions of each
The pattern that emerged was consistent. Within each diet-quality group, health outcomes were close to identical regardless of whether the food had been heavily processed. Healthy plant-based dietary patterns were strongly protective against type 2 diabetes whether or not their components were processed, and both the processed and unprocessed versions of those patterns were protective against cardiovascular disease

In other words, the variable that tracked with outcomes was nutritional quality. Processing level, once quality was accounted for separately, added little
Why the Classification Creates the Confusion
Most research in this area relies on the NOVA system, which sorts foods into four categories according to how much industrial processing they have undergone. The difficulty is that NOVA was not designed to distinguish between processing that improves a food and processing that degrades it
Fortifying a cereal with micronutrients pushes it into the ultra-processed category. So does loading a product with salt and fat for shelf life and palatability. A tin of beans, which delivers protein and fiber cheaply and keeps for years, sits in a processed category alongside products with almost no nutritional value. When a single classification treats a fortified wholegrain cereal and a can of soda as members of the same risk group, the resulting association is difficult to interpret, and this analysis suggests much of what has been attributed to processing was being driven by nutrient quality all along.
What This Does and Does Not Mean
This is preliminary work, and that caveat belongs near the front rather than the end. The findings were presented as a conference abstract and have not yet been peer reviewed or published in full. Until the complete paper is available, the details of how the diet indices were constructed cannot be independently evaluated, and the abstract and accompanying press materials do not agree on how many indices were used

The analysis also examined only the plant-derived portion of participants’ diets. Animal foods make up a substantial share of typical American eating patterns, so these results should not be generalized to the whole diet. And because the original cohorts were not designed to measure processing, intake of ultra-processed food could not be captured precisely
None of this establishes that processing is irrelevant. It indicates that processing alone does not appear to be the variable driving outcomes, which is a narrower claim and a more useful one
Why the Foods Themselves Still Matter
If nutritional quality is the variable that counts, then the composition of individual foods deserves more attention than the packaging they arrive in. Avocado is a useful example. Most people file it under healthy fats and stop there, but a single avocado supplies about 13 grams of monounsaturated fat, roughly 9 grams of dietary fiber, 2.6 milligrams of vitamin E, and close to a milligram of zinc
That combination is doing more than one job. Fiber is fermented by gut bacteria into short-chain fatty acids, which influence inflammatory signaling well beyond the digestive tract. Monounsaturated fats have been shown to modulate immune response. The vitamin E and zinc contribute antioxidant capacity. A food like this scores well on quality not because of any single component but because several are present at once, which is exactly the kind of nutrient profile the four-way analysis found to be protective.

The Takeaway
The appeal of the processing rule was its simplicity. One glance at a package and a decision is made. What this analysis suggests is that the simple rule was standing in for a more accurate one, and that a diet built on fiber-rich plants, whole grains, legumes, and produce appears to protect against diabetes and cardiovascular disease whether those foods come fresh, frozen, tinned, or fortified
For anyone who has felt guilty about relying on packaged foods for reasons of cost, convenience, or storage, that distinction is worth carrying into the next grocery trip. The question that appears to matter is not how much a food has been handled, but what it contains when it reaches the plate
