Texas health authorities are providing regular updates on the state’s reported cyclosporiasis cases
While the Texas Department of State Health Services has declined to provide county-by-county case counts, health authorities have provided the case counts by region
Cyclosporiasis is the illness caused by the parasite cyclospora, which can be found on contaminated produce. Some number of Texans are sickened by the parasite each year, but the illness has made national headlines this year amid a major, multistate outbreak linked to iceberg lettuce

Texas has not had any cases linked to that major outbreak
To prevent cyclosporiasis, health authorities recommend regular washing of hands and any surfaces that come into contact with food, as well as rinsing and scrubbing of produce. The surest way to remove the parasite from food, though, is to cook produce to an internal temperature of at least 158 degrees.
